Tuscan Chicken Wraps


2 chicken breasts in ½ inch strips
1 7oz jar roasted red peppers, drained and cut into 1 inch strips
2 T olive oil
2 garlic cloves, minced
1 tsp basil
½ tsp salt
½ tsp pepper
4 naan breads
fresh spinach
grated mozzarella cheese
Preheat oven to 425. Toss chicken, peppers, 1 T of oil, garlic, basil, salt, and pepper in a small casserole dish. Bake uncovered until the chicken is cooked, about 10-15 minutes.
Brush one side of each pita with remaining olive oil. Heat, oiled side down, directly on oven racks until slightly crisp but not brittle. Add chicken/pepper mixture, mozzarella, and spinach. Fold in half and eat. Serves 4
