Kodiak Banana Muffins

  • 2 cups Kodiak Power Cakes Mix - Buttermilk*
  • 2 ripe bananas, mashed (the riper the banana, the sweeter the muffin)***
  • 1 cup unsweetened vanilla almond milk (any milk will work)
  • 1 egg
  • 1/4 cup maple syrup**
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips**** (save a couple of tablespoons for topping the muffins)


Bake 350 x 22 minutes

Healthy Zucchini Muffins



  • 1 2/3 cups white whole wheat flour (or all-purpose flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup maple syrup
  • 1/2 cup milk (almond milk, 2% milk, or whatever you prefer)
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated fresh zucchini
  • 1/3 cups old-fashioned oats (uncooked)
  • 1 cup chocolate chips


Prepare a 12-cup muffin pan by either greasing it with cooking spray or lining the cups with paper liners. 

Combine dry ingredients, set aside.
In a separate mixing bowl, whisk together egg, maple syrup, milk, coconut oil and vanilla extract until combined.  Pour this mixture into the dry ingredient mixture, and stir with a spoon until just combined.  (Do not overmix.)  Stir in the zucchini, chocolate chips, and oats until just combined.
Bake for 18-20 minutes at 350

Blueberry Oatmeal Muffins


  • 1 cup quick oats
  • 1 cup low-fat buttermilk
  • 1 cup white whole wheat flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 egg
  • ¾ cup light brown sugar
  • ¼ cup melted coconut oil
  • 1 cup blueberries, fresh or frozen
  1. Heat oven to 400ยบ F. Coat a muffin tin with cooking spray or line with paper liners.
  2. In a small bowl, combine buttermilk and oats. Let soak for 5 minutes.
  3. Meanwhile, stir together flour, baking powder, baking soda and salt in a medium mixing bowl.
  4. In a large mixing bowl, whisk the egg with a fork. Add brown sugar, milk & oat mixture and melted coconut oil to the egg.
  5. Gently fold flour mixture into the wet ingredients until just combined. Don't over mix! Fold in blueberries.
  6. Fill muffin tins ⅔ full. Bake for 18-20 minutes.

Peanut Butter Banana Muffins

Ingredients
  • 1 cup peanut butter 
  • 2 large eggs
  • 2 medium sized very ripe bananas 
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 tablespoons honey (optional)
  • ⅔ chocolate chips
Instructions
  • Preheat oven to 400 degrees. 
  • Place bananas in the blender and blend until well mixed. 
  • Mix in other ingredients.
  • Pour batter into muffin tin greased with cooking spray or coconut oil. 
  • 10 minutes for mini muffins.

Banana Bread


1/3 c milk plus 1 T lemon juice - set it aside

1/2 c butter
1/2 c sugar

1 egg
1 tsp vanilla

3/4 c banana


1 1/2 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Add and mix in the sour milk.
yield: 1 loaf or 12 muffins


Bake muffins 400 x 22 minutes.
Bake loaf 350 x 1 hour.

Blueberry Muffins


Mix:
2 c flour
½ c sugar
1 T baking powder
½ t salt
Whisk together:
¾ c milk
1 egg
1/3 cup oil
Add wet to dry, do not overmix (about 10 strokes). Add 1 c or more of blueberries. Divide into 12 muffin tins and bake at 400 for 20 min.
Or use blackberries, or rhubarb. (If rhubarb, top with sugar)

Good Boy Muffins


½ c butter
1 c brown sugar
1 egg
1 c milk
1 t vanilla
2 c flour
1 t baking soda
¼ t salt
Bake at 375 for 15 minutes.

Bran Muffins




2 c Allbran
3 T baking soda
combine
add:
2 c boiling water
add:
1 c apple sauce
3 c sugar
4 eggs
add:
2 c raisins
1 liter buttermilk
add:
5 c flour
2 tsp salt
fold in:
4 c bran flakes
refrigerate over night
bake in batches 400 x 20 min
