Thai Chicken

- Joan Steed
2 T veg oil
2 lbs chicken breasts
Brown the chicken.
1 onion, chopped
1 clove garlic, minced
Saute together.  Layer over the chicken in a 9x13 pan.
1 t coriander
1 T sweet hot oriental chili sauce
1/2 t salt
2 T soya sauce
2 T peanut butter
1 - 14 oz can coconut milk
Combine over heat, pour over chicken and onions.
Bake 325 x 45 minutes.
Before serving sprinkle with zest and juice of one lime.
