Rice Pudding


1 ½ c cooked rice
2 c milk, divided
1/3 c sugar
2/3 c raisins
¼ t salt
1 T butter
1 egg, beaten
½ t vanilla
dash nutmeg or cinnamon
Combine rice and 1 ½ c milk, sugar, and salt in saucepan. Cook over medium heat, stirring occasionally until thick and creamy (about 15-20 minutes)
Blend remaining ½ c milk and egg. Stir into rice mixture. Add raisings. Cook 2 minutes longer, stirring occasionally. Add butter and vanilla. Sprinkle with nutmeg or cinnamon.
