Harvest Vegetable Soup


2 T butter
2 large leeks, chopped (whites only)
1 large onion, chopped
saute together
add:
2 c butternut squash
1 c carrot
1 chopped tart apple
4 c chicken stock
simmer till vegetables are tender
puree
add:
1/2 c light cream
