Crusty Rhubarb Cake


1 1/2 c sugar
1/2 c butter
1 egg
1 tsp baking soda
1 c milk + 1 T lemon juice
2 c chopped rhubarb
1 tsp vanilla
1 tsp salt
2 c flour
Mix until smooth, pour into a 9x13 pan.  Top with:
1/2 c butter
1/2 c brown sugar
1/2 c quick oats
1/2 t cinnamon
Blended well.
Bake 350 x 50 minutes.
